We have repurposed a 45ft container into a fully functional urban farm where we grow, incubate and harvest fresh oyster mushrooms. Now located at UCD we collect coffee grounds from the cafés around campus. We then use these grounds as the base of our mushroom growing medium.
After mixing the coffee with wood shavings and mushroom spawn we leave the mixture to incubate for 3 weeks. It is then moved into the other section of our farm which is where the mushrooms come to fruition. Here we are essentially replicating Autumn conditions with high humidity and plenty of fresh air mimicking the rain and wind of Autumn when mushrooms are in season.
We want to show that growing mushrooms can be done on a smaller scale and can play a part in an overall sustainable food system.
